Rubio’s Clovis set to open Dec. 8

Consistently ranked as one of the top fast casual chains in the nation, Rubio’s Coastal Grill is set to open its newest location in Clovis on Dec. 8. The new restaurant will be the second in the area, joining the popular Rubio’s in Fresno’s RiverPark. Look for it in the space that used to be occupied by Hunan at Clovis and Herndon avenues.

Since co-Founder Ralph Rubio opened his first restaurant in San Diego in 1983, Rubio’s Coastal Grill has been credited for starting the fish taco phenomenon in America. Cited by The Washington Post and Los Angeles Times as the country’s top fish taco expert, Rubio’s has sold more than 200 million Original Fish Tacos.

“Since opening the first Rubio’s restaurant in San Diego more than 30 years ago, our reputation for delicious coastal cuisine has spread across the nation, and our following of loyal fans has continued to grow,” said Rubio. “We are incredibly excited to introduce our chef-crafted menu and coastal ambiance to Clovis.”

Ralph’s culinary passion is evident in the inventive recipes used to make Rubio’s award-winning tacos, burritos, salads and bowls. Grilled-to-order responsibly- sourced seafood, such as shrimp and Wild Alaska Coho Salmon, are offered across the Rubio’s menu, while salads and bowls are topped with sizzling steak, all natural chicken raised without antibiotics or one of several seafood options like Wild Mahi Mahi.

Rubio’s first opened in 1983 in the San Diego neighborhood of Mission Bay.
